WiseGuy heard about Steve Chapin from Kristen Scott (www.lovefinewine.com) after a tasting she attended at Vine To Glass in Oceanside. She thought the wines were worthy, and this Cab certainly is. The nose shows black cherry and blackberry with touches of black olive, cedar, dill, dried herbs and spice. The palate shows bright cherry and berry fruit with the spice, olive and herb delivering on the promise of the nose. The finish is long, with good acidity holding up a mix of fruit and spice. Steve uses full berry maceration, which means the grapes are not crushed. He also adds some oak chips during fermentation to bring out a spicy character. Good show! Contains 15% Zinfandel and 10% Merlot.
